Homemade Key Lime Popsicles

Friends!!!

You are going to die when you try these popsicles. I was at my family friends house watching their girlies and they pulled these out of the freezer to have after dinner. They’re green (and mama is super healthy) so I didn’t think they’d be delicious, but I was so wrong! That night when I got home I went on Amazon and got their exact popsicle molds and bought the Vital Proteins Beef Gelatin. I had all of the other ingredients already so once my package got here I made them that day!

These also work if you are on the GAPS diet, Paleo friendly, and primal.

Ingredients:

  • 3/4 cup lime juice

  • 1/3 cup raw honey or maple syrup to taste

  • 1/4 cup coconut milk

  • 1 cup avocado (about 2)

  • 2 teaspoons vanilla

  • 1/8 teaspoon unrefined salt

  • 1/2 cup coconut oil (buy high quality for this)

  • 1 teaspoon grass fed gelatin (I use Vital Proteins Beef Gelatin)

Instructions:

  1. place gelatin in small bowl

  2. heat coconut milk so that it is very hot to the touch, then add it to the gelatin and whisk until completely dissolved

  3. pour coconut oil/gelatin mixture into the blender and add remaining ingredients. Blend until smooth and pour into molds and freeze fro 4-6 hours.

MAKE SURE to heat the coconut milk (not oil) and mix it with the gelatin. My first time making these I added all the ingredients to a bowl and totally forgot to heat the coconut milk with the gelatin so I had some gummy chunks… They were still delicious, but if you make these right they are the perfect creamy texture. And they truly taste like a sour key lime pie! I’d eat these as dessert over any sugary recipe any day! I hope you all love them, enjoy!
