Protein Pancakes

Y’all I am obsessed with this recipe I am posting! Those of you who follow me on Snapchat always see my pancakes and berries- I make them about three times a week if I’m being honest! They are super healthy, gluten-free, and packed with protein so I don’t have to feel guilty afterwards.

If you have a little blender like a Magic Bullet it fits the ingredients perfectly!

 

1 cup oats

1 cup plain Greek yogurt

2 eggs

1 tsp ground flaxseed

1 tsp chia seed

5 drops of vanilla extract

 

Start with a cup of oats (rolled or not) and pulse these in the blender until they are finely ground. Dump the oats into a separate dish and add 2 eggs, 1 cup of Greek yogurt, 1 tsp of ground flaxseed, 1 tsp of chia seed, and a couple drops of vanilla abstract into the blender. Finally add the oats back in and blend this all together but make sure the seeds stay intact. Oil a pan on the stove and pour as much of the batter into the pan that you would like. I make about 2 large pancakes with this, but you can also make about 6 small ones. Flip once they are golden brown around the edges, and then put your choice of fresh berries on top. I like raspberries, blueberries, strawberries, peaches, nectarines, etc. Since fruit isn’t currently in season I heat up frozen berries and add these on top with some organic maple syrup!
