Energy Ball Bites

I have always been obsessed wth energy balls because I love chocolate and peanut butter together! These are a great snack for on the go or before hitting the gym. They are packed with protein and super delicious! 


1 cup oats (I use 1/2 cup regular oats and 1/2 cup rolled oats)

2/3 toasted coconut flakes (I use the Trader Joe's sugar free coconut flakes) 

2/3 cup peanut butter 

1/3 cup honey

1/2 cup ground flaxseed 

1/4 cup ground or shredded almonds (I put almonds in food processor and pulse until ground)

1 tbsp chia seeds

1 tsp vanilla extract

Chocolate: I prefer to use dark chocolate but any kind will do. The semi-sweet chocolate from Trader Joe's is already shredded/cut into smaller pieces for easier use! 

Mix this in a large bowl using your hands and then roll into bite size balls

*If you want to bump up the protein, add a scoop or two scoop of protein powder
